What Is Lemon Essential Oil?

Also known as “liquid sunshine,” lemon essential oil is extracted from the peel of fresh lemons. Chemically, the components that render its unmistakable scent include: a-Terpineol with its hint of lilac; Geranial, which adds a zesty, citrusy character; Limonene deriving from the rind of the fruit; b-Pinene, which is found in baked goods and chilled dairy products and Gamma Terpinene, a component in eucalyptus oil. Lemon essential oil is usually extracted from the peel of fresh lemons through steam extraction, but sometimes a “cold-pressing” process is employed that pricks and rotates the peel as oil is released.
